July’s Cheese, Please! Challenge Recipe Round-Up – Summery Cheese

First of all, apologies for the tardiness of my round-up this month. The summer holidays are taking their toll on my available time as I seem to be engrossed in a constant round of Dinosaur Top Trumps, playhouse-building, learning-to-ride-a-bike supervision and football retrieval. But, as ever, a lovely haul of recipes makes the wait worthwhile.

I will be taking a summer vacation from Cheese, Please! but if any of my regular contributors would like to host it for one of the coming months, please do let me know and I’ll be happy to hand over the cheesy badge and immense weight of responsibility ;)

On with the summery cheese forthwith!

First off the block was Edibletcetera with her Steak with a Watercress and Stilton Sauce. A classic combination of mouth-watering steak and blue cheese is enhanced by the spicy tang of watercress.

 

 

 

 

 

Next up for the challenge was Creative Economy in the Kitchen who produced a glorious Blue Cheese Walnut Cheesecake. A delicious savoury flan using the Welsh cheese Perl Las, combined with walnuts – always a great match with blue cheese – this is perfect for a summer lunch or picnic.

There’s nothing that says British summer like courgettes and their prolific production capacity (well, not in my garden but apparently they do pretty well elsewhere). To celebrate such seasonal abundance, I cooked up a Courgette and Chunky Cheddar Loaf.

Sometimes the morning after the night before calls for something cheesy, greasy and hearty. Food Jam ticks all the boxes with this Breakfast Pizza; pepper, mushrooms, cheese and butter melt together on slices of rye bread to be served with fried eggs. Yum.

Continuing the fancy cheese on toast theme, New Recipe Night came along with his Tomatoes and Mozzarella on Brioche. Taking the simplest of ingredients – butter, beef tomatoes, anchovies, mozzarella – this is a sumptuous brunch dish.

Food Day-Dreaming then stopped by with another classic recipe, Tomato and Fetta Salad. Always simple but delicious, combine tomatoes with feta cheese, olive oil, vinegar and, if you want to go crazy, some avocado and basil too. Lush.

Summer is for picnics and barbeques but not everyone appreciates a ham sandwich or rack of ribs. For summer vegetarians everywhere, my Glamorgan Sausage Rolls make a great snack, packed with cheese, herbs and breadcrumbs.

Last but certainly not least was The Pink Rose Bakery with an unusual but delectable Peach, Cheese and Basil Tart. Blending fruit with cheese and summery herbs for a savoury sensation, this dish provides yet another addition to what looks like a delicious picnic spread.
